What is agave syrup? It’s a sweet concentrated syrup made from the agave plant, which thrives in the central semi-arid desert of Mexico. Our agave nectar is made from blue agave, which is grown in Mexico and is considered to be the finest agave in the world. To produce agave syrup, first the "pina" or "pineapple-like center" is soaked in purified water. Then, natural enzymes already present in the fruit are allowed to break down the inulin (complex carbohydrates) into monosaccharides (simple sugars). These sugars are predominantly composed of fructose and glucose.
This raw agave has a plethora of health benefits including a low glycemic index which may help control your blood sugar levels. This vegan sweetener is an excellent alternative to honey. It’s also rich in antioxidants and vitamin K, which may help with mental health benefits, and vitamin B6, which may help with digestion.
OUR PROCESS
Wildly Organic’s raw agave is processed at low temperatures. The natural fermentation of the inulin water, because the temperature is kept low, takes four to five days. The concentration of the nectar occurs solely by the use of a vacuum to remove excess moisture after fermentation. Once a specific concentration of sweetness is reached, the organic agave syrup becomes shelf-stable at room temperature and does not require refrigeration or any special storage.
Our agave is dark in color because it has the least amount of processing of any agave product. Lighter agave syrup can be produced by faster processing (which requires temperatures of 160 degrees or more) and heavy filtering. “Raw agave” sold by other suppliers, if light in color, has been filtered many, many times. Repeated filtering removes flavor and color.
WHERE OUR ORGANIC AGAVE SYRUP ORIGINATES FROM
When we visited the manufacturing plant in Mexico, we were offered 5 different shades of agave to choose from. Each sample had a slightly different taste with the strongest flavors coming from the darkest agave. The difference in the shades came solely from the number of times the agave was filtered and the fineness of those filters. Wildly Organic has chosen to purchase only the organic agave nectar which sees the lowest temperatures. We choose to sell only agave that is low-temperature processed in order to preserve the whole nutritive properties of agave.
Before visiting the plant ourselves, this type of information was unknown to us. However, by being there, we were able to monitor the process, ask numerous questions, and check quality control records, process logs, and look over the equipment. We are proud to tell you that our organic agave syrup is coming from a new, state-of-the-art plant with very tight quality control. Our raw agave nectar is:

IS RAW AGAVE GOOD FOR YOU?
Organic agave nectar can be good for you when consumed in moderation since it has a lower glycemic index than other sweeteners, meaning it’s absorbed slowly so there are no sudden sugar spikes. It also contains beneficial antioxidants and vitamins.
CAN YOU EAT AGAVE SYRUP EVERY DAY?
Yes, you can. But just like any other added sugar, it should be used in moderation since it’s sweeter and more calorie-dense than some other sweeteners. Keep this in mind and minimize your intake to enjoy agave in your recipes daily.
WHAT DO YOU USE RAW AGAVE FOR?
Organic agave nectar can be a great addition to your beverages such as tea, smoothies, and coffee. You can drizzle it over fruit and add it to dressings and marinades, as well as baked goods and desserts such as cakes, puddings, yogurt, and brownies.
WHAT DOES ORGANIC AGAVE SYRUP TASTE LIKE?
The taste of agave differs depending on how much it has been processed. Light-colored agave which undergoes the highest amount of processing has a very mild flavor whereas medium-colored agave has a slight caramel flavor. Dark agave or raw agave is processed minimally and thus has a strong caramel flavor similar to molasses and golden syrup.
